About

Dandelions are pretty common along the roads of Alaska. They have leaves the grow up and out from the base with a singular stem rising up from the middle. They have one large flower at the top of the stem that turns into a fluffy sphere when going to seed, releasing up to 200 seeds, primarily carried with the wind.

Dandelions are edible. Many people in Alaska collect the young leaves early in the season to use for salads. Leaves get bitter later in the season.

One cup of dandelions contains 112% vitamin A, 32% vitamin C, and 535% vitamin K.
